Cooking 6 racks of Baby Backs

Here is a trick I learned from the pros at the Green Egg BBQ Forum. Remove the membrane from the back of the ribs. It is not easy to get it started - holding the end with a paper towel makes it easy to hold on to and pull off.

You can see the other ribs that are de-membraned and rubbed with JJ's rub recipe.

Math Question: Can 6 go into 1?

Yes, here are 6 racks of ribs in 1 Large Big Green Egg.

Smoke is provided by hickory and apple woods.
Ribs are coated with JJ's rub. I am going for a 5 hr cook at 200-225 deg.

I rotated the ribs so the side facing up was now facing down. They sure look good and cooking at 210 deg is easy to maintain and has not done any charring yet.

The ribs have been on for 4.5 hrs and they are done -- but since our dinner guests are not coming until 6:30pm I am just waiting now.

Yes, it seems a small end piece has fallen off of one rack - yes I ate them! Wonderful.

Here I have added a little home made Q sauce for the last 30 min

Yummy!! I had 10 guests and in 30 min I had no ribs left.
